Butternut Squash Ravioli with Sage
Recipe by Executive Winery Chef DJ MacIntyre ∙ Serves 2

¼ cup
10-12 strips
butternut squash ravioli
unsalted butter
shallots — minced fine
sage — fresh, sliced ¼” x 1-2” julienne
orange juice — fresh
white wine — dry
whipping cream
butternut squash – peeled, cubed ½” and roasted
maple syrup — pure
roasted red bell peppers — sliced ¼” x 1-2” long
kosher salt
hazelnuts — toasted, cracked in half
orange zest — fresh strips
method:
Place the ravioli in boiling water and cook to al dente and heated through – approximately 4-5 minutes or
until they all float. Heat a small sauté pan over medium heat, melt a quarter of the butter and then add
the maple syrup. Stir and then add the roasted butternut squash and toss to coat. Sauté for 3 minutes
tossing and continually coating the squash until warm and sticky.
Meanwhile, place the remaining butter in a sauté pan over medium heat and lightly brown. Add the
shallots and the sage, and cook until the butter begins to brown around the edge. Do not blacken;
you are looking for a golden nutty brown color. Add the white wine and
orange juice. Reduce by half. Add the cream and bring to a boil. Then add the
peppers and the salt, toss and reduce slightly.
Strain the ravioli and place them in the pan. Toss to coat, turning the raviolis
quickly. You might need a spoon to separate the raviolis.
Place the ravioli evenly around the plate; top with the cream sauce and the
peppers. Top with the caramelized butternut squash and drizzle the remaining
maple sauce over the entire plate. Garnish the top with the hazelnuts and fresh
orange zest strips.
