Creamy Potato Leek Soup

unsalted butter
white onion — diced ¼”
leeks — white part only, chopped ¼”
shallots — minced
celery — chopped, stalks and leaves
all purpose flour or gluten free 1 to 1
vegetable stock
vegetable base
bay leaves — whole
russet potato — peeled ¼” diced
white pepper — ground
kosher salt
whipping cream
optional garnishes
bacon — cooked crisp, chopped
crispy onion strings
chives — sliced 1⁄16”

method:
Place the butter in a sauté pan over low heat. Add the onions, leeks, shallots and celery
and cook until transparent. Add the flour, stir and cook for 3-5 minutes until the roux
is completed.
Heat the vegetable stock, vegetable base and bay leaves together, then slowly add the
roux to the stock, stirring constantly to remove any lumps. Reduce heat to a simmer,
add the potatoes, then simmer for 30 minutes or until the potatoes are tender.
Remove the soup from the heat. Let cool slightly. Place the soup into the blender and
purée the soup. Strain soup through a mesh strainer to remove any stems. Then add
the salt, pepper and cream. Transfer, label and store refrigerated until needed.
