Lemon Bars

My Great Grandma’s Lemon Bars

I chose this recipe because it reminds me of
my grandmother and good times. She would
often make these whenever we came to visit.
Yields: One 9”x13” pan, +/- 10 servings
Ingredients
Crust
2 cups Flour, sifted
1/2 cup Confectioners Sugar
1 cup Butter, softened
Filling
4 Eggs
2 cups Granulated Sugar
1 Lemon Rind
1/3 cup Freshly Squeezed Lemon Juice
1/4 cup Flour

1/2 tsp Baking Powder

Preheat oven to 350°F
Mix crust ingredients in mixer. Don’t wash the mixer/bowl.
Press into 9”x13” pan and bake for 25 minutes (lightly brown).
Beat lling ingredients in mixer. Pour this mixture over the crust and bake for another 25 minutes.
Top with confectioners sugar. Cool and cut.
