St. Louis Style Thin Crust Pizza

My mom makes this pizza, and it’s the kind
that is most often found around St. Louis. My
favorite toppings are pepperoni, bacon,
sausage, onion, peppers, and olives, but you
can put on whatever you like.
Yields: 2 very thin 16” pizzas
Ingredients
Pizza Dough
2 1/4 tsp Active dry yeast
1/2 tsp Sugar
3/4 cup Warm water
1 3/4 cups All-purpose our
1/2 tsp Salt
2 tsp Cheese (Provel for true St. Louis-style)
Toppings of choice
Sauce
6 oz Tomato paste
1/2 cup Water
2 tbsp Italian seasoning
1/2 tsp Garlic powder
1/2 tsp Salt

Preheat oven to 500°F
Dissolve yeast and sugar in water; allow to rest for 8 minutes.
In a separate bowl, combine our and salt and pour in yeast water and mix well with a heavy spoon.
Turn dough onto a oured surface and knead for 2 minutes, then divide in half.
Roll dough into 2 12-16" circles (the bigger the circle, the thinner the crust).
Place dough on a pizza pan and pre-bake for 5 minutes.
Make sauce by combining sauce ingredients and mixing well.
Spread sauce over pre-baked crust and top with cheese and desired toppings.
Bake for 8-10 minutes, or until edges are golden and cheese is bubbly
