Food Roots
The waters of the Potomac and Patuxent
Rivers have been a food source to Charles
County residents for hundreds of years.
Watermen harvest succulent crabs and
oysters and reel in rockfish and catfish. Head
to a dockside restaurant where you can kick
back with a cocktail and feel yourself unwind
as you look out over the water and anticipate
the boat-to-table bounty you’re about
to receive.
While crabs are a big part of our culture,
generations of Charles County residents
consider stuffed ham a holiday tradition. This
classic Southern Maryland dish is believed
to date back to the 17th-century and has
both British and Afro-Caribbean origins. The
ham is salted, deboned, and slit into several
places before being stuffed with a mixture of
cabbage, kale, onions, and seasonings. The
ham is then wrapped, boiled or baked, sliced,
and served cold. Purchase a salted ham at
Hancock Family Farm or Bowling Green Farm
to try this delicacy at home.
