Yorkshire puddings are famously tricky to get right.
They so often turn out 昀氀avourless, 昀氀at as a pancake,
or with soggy bottoms. But expert help is at hand –
our Group Executive Chef (aka boss chef)
Matt Sullivan has kindly shared his 昀椀ve secrets for
making the most delicious, golden-brown and
crunchy Yorkies you’ve ever had.
Double Egg Yorkies
Ingredients for 4 large Yorkies
– 400ml whole milk
– 400g plain 昀氀our
– 8 large eggs (free-range is best)
– 40ml wholegrain mustard
(Matt swears by Colman’s)
– 30g chopped chervil
– Vegetable oil
Secret #1
To make your Yorkshires bigger, 昀氀uf昀椀er and tastier,
you want two eggs per Yorkie, so use one of the
four-hole tins with extra-large holes.
Secret #2
Making the batter the day before gives it a
much-needed rest and lets the 昀氀avours infuse
(plus, you have less to do the next day).
Secret #3
The extra fat in whole milk makes for a better rise
and tastier 昀氀avour.
Secret #4
The chervil and mustard make your Yorkies
proper delicious.
Secret #5
Not opening the oven door while the Yorkies are
cooking (not even for a quick peek) ensures less
chance of collapse.
How to make your batter (the day before)
How to cook ’em (the next day)
Step 1
Crack the eggs into a mixing bowl and
whisk vigorously until completely smooth.
Step 1
Half an hour before cooking, remove the batter
from the fridge and give it a quick stir.
Step 2
Pour in the milk and whisk again until blended.
Step 2
Preheat the oven to 200ºC.
Step 3
Sieve in the 昀氀our while whisking continuously
until smooth.
Step 3
Half-昀椀ll the four holes of your large Yorkshire
pudding tray with oil (that’ll be around 25-30ml
for each hole).
Step 4
Stir in the chervil and mustard.
Step 5
Place the batter in the fridge overnight and relax.
Step 4
Place the oiled Yorkshire tray on a baking tray
(to catch spillages) and place it in the oven for
20 minutes.
Step 5
Remove the tray from the oven (watch out for that
hot oil) and 昀椀ll the Yorkshire holes with your batter.
Step 6
Place the tray back in the oven for another
20 minutes.
Step 7
Remove the tray, serve your perfect Yorkies, and
revel in the admiration of your friends and family.
