Located in Calgary’s East Village, our focus is a result of the influence of Chef Darren MacLean’s
mother on his cuisine. Her love of plants, vegan recipes, and an appreciation of Fish and Sushi is why
the restaurant chose to reflect these values not only just in the food but by the namesake of NUPO

EIGHT looks at ingredients, techniques, and flavors that have found specific homes across our nation,
nestled into the niches of the cultural mosaic that make up the Canadian identity. Cuisine defined not
only by location, culture, and circumstance, but by the chaotic conflagration of the three. We firmly
believe that Canadian food is far from having any definition. EIGHT aims to serve as a catalyst for
conversation and most importantly an exploration of what Canadian food is and will be.

Noble Pie was born out of practice, patience, and obsessive experimentation. Inspired by travels to
many of the great pizzerias of North America, self-taught pizza maker & owner Mike Lange devotes
methodical care and attention towards every element of your pie. Our dough recipe is dynamic; a
constant work in progress. We are dedicated to the pursuit of new knowledge, processes, and
ingredients in an effort to perfect our fermentation and baking techniques.
