Meadowsweet Sorbet
Recipe
As the sun shines brightly and the temperatures rise, what could be more refreshing than
a delicious meadowsweet sorbet to cool you down on a hot summer day? Meadowsweet,
with its delicate fragrance and subtle sweetness, makes for a delightful treat that
captures the essence of summer in every bite. Let's dive into this simple yet exquisite
recipe that will surely become a favourite in your summer dessert repertoire.
Ingredients:
30g (2 cups) meadowsweet flowers
200g (1 cup) sugar
500ml (2 cups) water
Juice of 2 lemons
serving 4-6 people depending on size
Instructions:
1. Begin by gently rinsing the meadowsweet flowers to remove any dirt or debris. Be sure to use only the
flowers, discarding the stems.
2. In a saucepan, combine the sugar and water over medium heat, stirring until the sugar has completely
dissolved. This will create a simple syrup base for your sorbet.
3. Add the meadowsweet flowers to the syrup and bring the mixture to a gentle simmer. Allow the flowers to
infuse their delicate flavour into the syrup for about 10-15 minutes.
4. Remove the saucepan from the heat and let the mixture cool to room temperature. Once cooled, strain the
syrup to remove the meadowsweet flowers, ensuring a smooth consistency.
5. Stir in the lemon juice to the meadowsweet syrup, adjusting the amount to suit your taste preferences. The
lemon juice will enhance the floral notes of the meadowsweet and add a refreshing tang to the sorbet.
6. Pour the mixture into a shallow container and place it in the freezer. Every 30 minutes, take the container
out and stir the mixture with a fork to break up any ice crystals that may be forming. Repeat this process
several times until the sorbet reaches a smooth, slushy consistency.
7. Once the sorbet has reached the desired texture, transfer it to a sealed container and freeze for an
additional 2-3 hours to firm up.
8. Serve the meadowsweet sorbet in chilled bowls or cones, garnished with fresh meadowsweet flowers for a
beautiful presentation. Enjoy the delicate flavours of summer with every spoonful of this enchanting treat.
With its floral aroma and light, refreshing taste, meadowsweet sorbet is the perfect way to indulge in the
flavours of summer. Whether enjoyed as a standalone dessert or as a palate cleanser between courses, this
sorbet is sure to impress your guests and leave them craving more. Treat yourself to a taste of summer with
this delightful meadowsweet sorbet recipe!
