3.6 Sampling
Food and Health & Safety
The Food and Safety Team9s Food Sampling Policy, including arrangements for the
analysis and/or examination of the samples, is set out in appendix 9.
In 2024/25 we will continue to take samples of water and shellosh for classiocation and
algal toxin monitoring purposes.
We also plan to take 80 samples of ready-to-eat food in accordance with our sampling
policy, which is detailed in appendix 9. Microbiological analysis of the samples will be for:

Aerobic colony count

E. coli
"
Listeria species
"
Enterobacteriaceae
"
Coagulase-positive Staphylococci
"
Salmonella species.
Water samples may be taken when investigating outbreaks of Legionnaires9 disease.
Unsatisfactory results are followed up in accordance with associated criteria to ensure
the risk to public health is protected.
In 2023/24 the Food and Safety Team participated in a sampling study to investigate the
microbiological quality of cooked ready-to-eat sliced meat from both retail and catering
premises co-ordinated by UKHSA Food, Water and Environmental Microbiology Services
(FWEMS) testing laboratory.
The Food and Safety Team plan to participate, in 2024/25, in a sampling study to
investigate the microbiological quality of unpasteurised and pasteurised milk cheeses
from retail, manufacturers and dairies. This is also co-ordinated by UKHSA - Food, Water
and Environmental Microbiology Services (FWEMS) testing laboratory.
