EMULSIFICATION
Oysters with Lemon
Air
Ingredients for 4 servings
For the air
175g lemon juice
125g water
3 doses of LECITE
For the oysters
4 oysters
Lemon rind
Instructions
•
Combine the water with the lemon juice.
•
Add the LECITE and dissolve with a hand-held
electric blender. Skim the liquid surface with the
hand-held electric blender. This causes bubbles to
form; their texture is similar to that of soap suds.
•
Once formed, let the air rest for a minute and then
serve.
•
Grate a little lemon rind on each open oyster.
•
Collect some of the air and place on each oyster
with a teaspoon.
Tips & suggestions
Due to its acidity, this air goes
well with shellfish. Should you
wish to use it in sweet recipes,
replace part of the water with
sugar syrup.
The lemon juice can be
replaced with any other citrus
juice like orange or grapefruit,
depending on what you wish
to use it for.
