SPHERIFICATION
Liquid Cherries
Ingredients for 10 servings
For the cherry filling
500g cherry juice
2 doses of XANTANA
For the dripped cherries
125g of 70% couverture chocolate
125g cocoa butter
Other ingredients
Gold leaf
Instructions
Cherry filling
•
With the help of a hand-held electric blender,
hydrate the XANTANA in the cherry juice.
•
Using the syringe, fill spherical moulds with the
mixture and put them in the freezer.
•
When half frozen, insert cherry stalks, making sure
they are well centred.
•
Place them back into the freezer. When fully frozen,
unmould.
Dripped cherries
•
Melt the cocoa butter and the couverture separately.
Combine them and then dip the frozen cherries in
one by one. Reserve in the refrigerator.

Once ready to serve, remove from the refrigerator
and, using a paintbrush, decorate with a piece of
gold leaf and serve on a cold plate.
