SPHERIFICATION
Spherical Mango
Daiquiri
Ingredients for 10 servings
150g mango juice
10g passion fruit juice
40g water
40g sugar
50g rum
5g GLUCO
0.5 XANTANA
*Reverse spherification bath solution

Instructions
•
Prepare the syrup with the water and sugar.
•
Combine the juices with the syrup.
•
Add GLUCO and beat with an electric beater until
dissolved.
•
Add the XANTANA and blend in an electric blender
until the mixture is smooth and slightly thickened.
Set aside.
•
Form the spheres in the ALGIN bath using the 2.5ml
measuring spoon. Leave to cook for one minute
and retrieve from the bath with the slotted spoon.
Reserve in the syrup.

Serve chilled over crushed ice.
