EMULSIFICATION
RaspberryElderflower Liqueur
Ingredients for 4 servings
For the elderflower liqueur air
200g elderflower liqueur
4 doses of SUCRO
For the cocktail
140g raspberry pulp
40ml lime juice
80ml elderflower liqueur
240ml vodka
Other ingredients
Pansies or similar flowers
LyoFrambuesa
Instructions
Elderflower liqueur air
•
Using a hand-held electric blender, dissolve the
SUCRO in the elderflower liqueur.
•
Once dissolved, skim the surface of the mixture with
the blender to form a sudsy foam.
Cocktail
•
Combine all the ingredients in a cocktail shaker,
with plenty of ice.
•
Strain the cocktail and pour into a previously chilled
martini glass.
•
Using a spoon top with elderflower air.
•
Garnish with a pansy on one side and dust a strip of
LyoFrambuesa on the other.
