omanian apple cake is a delicious way to use the
glut of apples at this time of year and makes a
change from our usual crumble and English apple
tart. It can be made with any variety of eating
apple, or a mixture and is the perfect way to use up
windfalls as damaged parts can be discarded and it
is also dairy free.
This recipe was handed down to local resident Julia
from her grandmother, Elena (left), who lives in
Ramnicu Valcea in Romania. She used to work in the
kitchens of a hospital specifically for orphans. The
director of the hospital was a paediatrician who was
keen to do everything possible to help the children
and provided healthy recipes for the kitchen staff
to follow. Elena used to make this apple pie for the
orphans’ 4pm snack (hence the big tray) and has
been making it every year since for the last 35-40
years.
