The Department may permit an Oslo Lunch Canteen to be
operated provided that
(a) Suitable accommodation not needed for more urgent purposes
is available.
(h) The unit is operated for at least three days weekly.
(c) The canteen is voluntarily staffed: by members of the local
Parents and Citizens' Association or -:others' Club and all
profits are paid into a special fund to be used for canteen
purposes or for the purchase of desirable school aids. A
paid supervisor or manageress may be employed provided
wages are paid from canteen 1Jrofits.
(d) When plant items supplied by the Department are to be
replaced by reason of depreciation and/or total breakdown,
such replacement costs are to be borne by the Committee.
Insurance of donated equipment and replacement of depart—
mental equipment in the event of fire or theft, is covered
by this Department. If the Canteen Committee desires to
insure stock ,tells on hand, arrangements may be mace at
the Committee's discretion with any insurance company.
(e) Once a standard set of equipmeftt has been provided by the
Department applications for additional items will not be
considered. A standard set comprises:
1 hot plate (or boiling top)
sink heater
1 electric food slicer
1 domestic type refrigerator
and the following miscellaneous iter11s:
3 enamel or aluminium dishes (flat)
mixing bowl
1 colander
3 trays
3 sharp vegetable knives
6 knives for buttering bread
4 forks
6 teaspoons
1 mincer or vegetable shredder
3 plates
strainer
1 milk container
jugs for serving milk
2 washing up dishes (for washing lettuce etc.)
1 tin opener
dish cloths
6 tea towels
6 food covers
2 saucepans
1 kettle
1 bucket
1 broom
1 floor mop
1 scrubbing brush
(f) Oslo Lunches only will be sold. Such extras as ice cream,
nuts, vegetable soups, cocoa, .;Ind. frankfurts (these in the
winter period only) may he added, but cakes, pies, pastries,
sweets and soft drinks must not be sold.
