Creamy Chicken
Pasta
Serves 4 | Prep Time: 15 mins | Cook Time: 40 mins
Ingredients
8 oz. rigatoni pasta
1 lb. chicken breast
Salt and pepper, to taste
3 tbsp. extra virgin olive oil
1/3 cup chicken broth
15.5 oz. jar of Bama Red sauce
1/2 cup heavy cream
1/4 cup Greek plain yogurt
3/4 cup Italian blend cheese
Directions
1. Pre-heat oven to 350 degrees.
2. Bring large pot of water to a boil. Cook pasta according to directions on box.
3. Slice chicken breasts horizontally (if thick).
4. Pat chicken dry with paper towels and season with salt and pepper.
5. Heat 2 tbsp. oil in 12-inch skillet over medium-high until just smoking.
6. Cook breasts until lightly browned, about 3 mins. per side - should be 'just' cooked through.
7. Add 1 tbsp. oil and repeat with remaining breasts.
8. Remove chicken from skillet and set aside.
9. Deglaze skillet with 1/3 chicken broth.
10. Cut chicken into bite-size pieces and put back into pan and simmer 2 mins.
11. Combine sauce, heavy cream and yogurt.
12. In a casserole dish, mix cooked pasta, chicken, sauce mixture and 1/2 the Italian cheese.
13. Top with remaining Italian cheese and bake for 20 mins or until heated through.
