Zucchini Noodles
Serves: 4 to 6 | Prep Time: 30 mins | Cook Time: 20 mins
Ingredients
4 - 6 med. zucchini prepared as noodles (use spiralizer or buy already cut)
2 tbsp. butter, unsalted
2 shallots, minced
2 garlic cloves, minced
15.5 oz. jar of Tomato Basil sauce
Salt and pepper, to taste
1/4 cup parmesan cheese, grated (optional)
Handful fresh basil leaves, chopped
Directions
1. Lightly salt raw noodles and let sit about 20 minutes.
2. Using paper towels or a clean kitchen towel, gently squeeze out any remaining liquid.
3. Heat a large skillet on medium-high heat. Add butter, shallots, garlic, and cook until shallots are
translucent, about 2 minutes.
4. Add zucchini noodles to pan and cook another 2 minutes to remove more moisture from noodle.
5. Add sauce, a few tablespoons at a time, until your desired texture and sauce is heated through.
Salt and pepper, to taste.
6. Sprinkle in parmesan (optional), stir to combine.
7. Turn off heat. Sprinkle in fresh basil. Serve.
