ROAST BEEF
*** WITH HERB BUTTER ***
Ingredients:
3 to 4 pounds beef roast (ribeye or
sirloin)
Salt and black pepper, to taste
3 tablespoons olive oil
Herb Butter:
1/2 cup unsalted butter, softened
3 cloves garlic, minced
1 tablespoon each: fresh rosemary,
thyme leaves
1 teaspoon dried oregano
Zest of one lemon
Salt and black pepper, to taste
Instructions:
1. Preheat oven to 375°F. Season beef roast with salt and pepper.
2. Sear the roast in olive oil in an oven-safe skillet until browned on all sides.
3. Mix softened butter with garlic, rosemary, thyme, oregano, lemon zest, salt, and
pepper.
4. Spread herb butter over the roast. Roast in the oven until desired doneness (20-25
minutes per pound for medium-rare).
5. Baste the roast every 20 minutes. Remove from the oven, cover with foil, and let it rest
for 15 minutes.
6. Slice the roast, drizzle with remaining herb butter, and serve.
