INTEGRATED SINKS
WATER SOURCE One single sink for general purpose use, but not for cleaning or
hand washing, located near the proposed coffee machine or similar place where
water needs to be sourced for use. This water cannot be taken from the cleaning
sink.
CLEANING One double bowl sink for cleaning and sanitising equipment. Each bowl
should be big enough to hold the largest piece of equipment in the kiosk, such as a
really big pan. There needs to be a space for ‘loading’ [stacking dirty dishes] on one
side and ‘drainage’ [drying clean dishes] on the other side.
