Simple Hummus
Serves: ~1.5 cups | Prep Time: 10 mins | Total Time: 20 mins
This hummus dip is super simple to make and perfect for dipping your favourite veggies.
Ingredients

| 60 ml (1/4 cup) lemon juice
(from 1 large lemon)
1. In a food processor, combine the lemon juice, oil, garlic,
cumin, and a pinch of salt. Process for 30 seconds. Scrape the
sides and bottom of the bowl, then process another
30 seconds or until well blended.
| 30 ml (2 tbsp) olive or
vegetable oil
| 1 garlic clove, minced
| 2,5 ml (1/2 tsp) ground cumin
(optional)
| 1 can (15 oz) chickpeas or
11/2 cups cooked chickpeas,
divided
| 2-3 tbsp water
| Salt, to taste
2. Open, drain and rinse chickpeas. Add half of the chickpeas
to the food processor and process for 1 minute. Scrape sides
and bottom of the bowl, then add remaining chickpeas and
process until thick and quite smooth, 1 to 2 minutes.
3. With the food processor turned on, slowly add 2 to 3 tablespoons
of water until you reach the perfect consistency.
4. Taste for salt and adjust as needed. Serve hummus with a
pinch of paprika if desired.
