Cranberry & Pumpkin Seed Bars
Serves: 12 | Prep Time: 10 mins | Total Time: 10 mins + chilling time
These seed bars can be made ahead of time and stored in the freezer for later.
Ingredients

| 180 g (2 cups) rolled oats
1. Stir oats, nut, seed or soy nut butter, flaxseed, honey,
cranberries and pumpkin seeds together in a bowl; press into
a 9x11 inch baking dish, using the back of a spatula to press
into a flat layer.
| 300 g (11/4 cups) nut, seed or soy
nut butter
| 150 g (1 cup) ground flaxseed
| 125 ml (½ cup) honey
2. Refrigerate mixture at least 1 hour.
| 130 g (3/4 cup) dried cranberries
3. Cut into 12 bars and wrap each individually in plastic wrap
for storage.
| 50 g (1/4 cup) pumpkin seeds

A Canadian product, flaxseeds are interesting for their omega-3 fatty acid and fiber
content. However make sure you consume them ground to reap all the benefits!
