Frozen Oatmeal Bites
Serves: 12 | Prep Time: 15 mins | Total Time: 20 mins + freezing time
These make-ahead oatmeal cups make morning preparation a breeze.
Ingredients

| 135 g (1½ cups) oats
1. Combine the oats, dates, water, milk and salt in a large
saucepan and bring to a boil.
| 35 g (¼ cup) chopped dates
| 375 ml (1½ cups) water
| 375 ml (1½ cups) milk or soy milk
| Pinch of salt
| Assorted chopped fruit, nuts,
shredded coconut, etc.
2. Reduce heat to medium and cook for 2 to 3 minutes, or to
desired consistency. Set aside to cool slightly.
3. Grease two 12-cup muffin tins with cooking oil or butter, or use
liners. Set aside.
4. Divide the cooked oatmeal between the muffin cups, and top
each with desired toppings.
5. Cover with plastic wrap and place in the freezer for several
hours, or until frozen.
6. Once frozen, pop out of the muffin tins, loosening with a
butter knife or small spatula, if necessary, and store in reusable
containers. Return to freezer.
7. Remove desired number of cups (1 to 3 per serving) from the
freezer the night before or the day you plan to serve them.
8. Warm for 1 to 2 minutes or enjoy cold!
