French Toast Cups

These French toast muffins are easy to make and fun to eat!
Ingredients

| 500 ml (2 cups) milk
or soy milk
1. Whisk milk, eggs, vanilla and cinnamon in a bowl.
| 4 eggs
| 15 ml (1 tbsp) vanilla extract
| 2,5 ml (1/2 tsp) cinnamon
| 300 g (8 cups) whole grain
bread, cubed
2. Add cubed whole grain bread; soak 10 minutes,
stirring occasionally.
3. Divide among 12 oiled muffin cups; top with sliced almonds
or pumpkin seeds (optional).
4. Bake at 350°F until set, 25 minutes.

For a sweet touch, serve with berry compote. For
special mornings, serve with maple syrup or honey.
