Choice is what we all desire, and in this unique time, it is what consumers will need. The flip
side of these expanded touch points are shifting and stream-lining formats, such as drivethru only Convenience Stores – a format not typically associated with this category.
Then there are the advent of meal delivery services, where customers don’t need to even
enter the physical space. As an extension to that, to some degree we’d include customer
app pick-up as a growing dimension of fulfillment options, empowering the customer by
putting a full range of ordering options in their hands and allowing for a truly touchless
experience.

These options will lead operators to carve out space in their stores for these service
channels, and with a premium on real estate, every inch is critical to the bottom-line. This
then leads to the questions about the right sizing of dining areas, likely making seat counts
the tradeoff for these new operational needs, particularly in the QSR segment.
While none of these items by themselves are revolutionary, it is important to acknowledge
that the pandemic has accelerated the widespread adoption of these alternatives to dining
in almost every restaurant category from fine dining to fast casual.
