DISTILLING
D
istillation is a chemical-physical separation process in which post-fermented alcoholic liquids are boiled from a
liquid state to vapors, which are then separated and condensed to produce a new liquid mixture - the distillate.
The distillation process purifies the liquid and removes dilution components such as water in order to increase the
proportion of alcohol contained in it. The quality of a distillate depends primarily on three things: the raw material,
the distillation equipment, and the operator.
