CASK BEER PRODUCTION

ask Beer, also known as “Real Beer", is a style of beer that originated in England and has been embraced by
some craft brewers. It is an ale that is unpasteurized and completes its maturation and clarification within a
wooden cask or stainless-steel keg at the retail location where it is to be served. The maturation process includes
the addition of priming sugars and fining compounds. Priming sugars that are fermentable (dextrose/sucrose) are
used to adjust the fermentable extract and carbonation levels and non-fermentable sugars (lactose & maltodextrin)
are used for sweetness and mouthfeel. Clarification was traditionally accomplished by the addition of “isinglass”
a generic term that covers various fish collagens and proteins. Today, many brewers use various forms of colloidal
silicas. Colloidal silicas are vegan friendly and are easier to use than “isinglass”. The wooden cask characteristic
when producing in stainless steel casks can be mimicked by use of oak alternatives.
Clarcoll
Highly purified fish protein produced with an innovative process to maximize surface charge
without the need for pre-dissolution in water. Ideal for traditional cask beer production.

Liquasil 30
30% silicon dioxide solution designed for the clarification of beer. Increases the efficiency
of protein fining agents while preventing over-fining.
y Negative charge combines with positive charge of protein fining agent, creating a
flocculating “net” which forces solids to the bottom of the tank.
y Should be used in conjunction with a protein fining agent.
Application: Add while filling the cask.
Dosage Rate: 50–500 ppm. Must be optimized to style being produced.
Packaging: 25 kg drum
Stabisol
Silicasol (silicic acid hydrosol) with SiO2 content approximately 30% w/w and a density of
1.2 g/mL that crosslinks SiO2 particles to form a hydrogel, which then forms a protein-silica
complex that progresses to flocculation, and finally forms a very compact sediment resulting
in extremely brilliant cask beer.
