TANNOIDS
Chapon defined tannoids as “polyphenols that precipitate with PVP (water soluble polyvinylpyrrolidone) or PVPP (water insoluble
polyvinylpolypyrrolidone)”.
They are flavanoids formed from the monomeric flavonols catechin, epicatechin, and gallocatechin, with a structure similar to
the polymeric proanthocyanidins, prodelphinidin B3 and procyanidin B3. These polyphenols have hydroxyl (-OH) groups on their
aromatic rings, which makes them haze-active but also enables their selective removal from beer either by silica gel or PVPP.
