The brewing process involves the creation of a hopped fermentable sugar solution called “wort” which
is produced from natural raw materials, malted cereal grains, and hops. During the creation of the wort,
proteins and polyphenols are extracted from the raw materials. Some of these components are beneficial
to beer, such as proteins for foam and mouthfeel and polyphenols for flavor and antioxidation potential.
Wort is then fermented into beer.
Clarity of the final product is an important visual characteristic of beer and is determined by the interactions
of proline and glutamine-rich haze-forming (sensitive) proteins and polyphenols (tannoids) which form haze.
SENSITIVE PROTEINS
The haze-active proteins or protein fragments (polypeptides) have regions rich in the amino acid proline. It is the prolinerich regions that form the binding sites for proline recognition sites on the polyphenol molecules.
