Great-Great-Gram Ingraham’s Soft Molasses Cookies

This recipe comes from my great-greatgrandma on my dad’s side. We usually bake
these around the holidays and these are the
cookies we leave out for Santa at Christmas.
Yields: 40 cookies
Ingredients
1 cup Sugar
1 cup Molasses
1 cup Vegetable oil
5 cups Flour **
4 tsp Baking soda
2 tsp Cream of tartar
1 tbsp Ginger
1 tbsp Cinnamon
1 tbsp Vanilla
1 Egg
1/4 tsp Salt
3/4 cup Boiling water
** Gluten-free version: replace the 5 cups of our
with this combo and follow the remainder of the
recipe as written: 2 ½ cups rice our, 1 ½ cups
sorghum our, ½ cup tapioca starch, ½ cup corn

starch and 1 teaspoon xanthan gum.

Preheat oven to 350°F
Blend sugar, molasses, and oil together. Add egg and beat until smooth.
Then add dry ingredients.
Add boiling water last. This will make the batter foam because of the baking soda and cream of tartar.
Drop 2 tablespoons of batter on a slightly greased cookie sheet, sprinkle with a little sugar, and bake for
10-12 minutes.
