Sushi is really good, because it can be made
with anything, and can be made many
different ways. I like my sushi with spam or
salmon, and avocado, cucumber, and carrots.
Yields: 7-8 rolls
Ingredients
2 cups Medium-grained white rice
3 cups Water
1/3 cup Rice vinegar
3 tbsp White sugar
1 tsp Salt
8-10 sheets Nori

Instructions
• Rinse the rice until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then
reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be
absorbed. Cool until cool enough to handle.
• In a small saucepan, combine the rice vinegar, sugar, and salt. Cook over medium heat until the sugar
dissolves. Cool, then stir into the cooked rice. When you pour this into the rice it will seem very wet. Keep
stirring and the rice will dry as it cools.
• Cover and let rice cool on the counter (or in the refrigerator) until it reaches room temperature.
• Place one sheet of nori with the rough side facing upwards on rolling mat.
• Wet your hands and grab a handful of rice and place it on the nori. Spread the rice in a thin layer over the
nori.
• Arrange sh/veggies in a horizontal row along the bottom of the rice.
• Grabbing both nori and the mat, roll the mat over the lling, squeezing down to make a nice, tight roll.
Squeeze down along the way to keep the roll holding its shape.
• Transfer the roll onto a cutting board and slice.
