Vegetarian Biscuits and Gravy

My mom loves these and couldn’t nd a
vegetarian version in restaurants, so she
worked up a recipe to make at home. Now, it
is more common, but I still like hers best.
Yields: 1-2 Servings
Ingredients
Biscuits (makes 4-5 biscuits)
1 cup All-purpose Flour
2 tsp Baking Powder
1/2 tsp Salt
2 tbsp Vegetable Shortening (use butter if you
want more crumbly biscuits)
1/2 cup Milk
1 tbsp Sugar
Gravy
1 tube Lightlife plant based ground sausage or
your choice of vegetarian sausage. I don’t
recommend crumbles.
2-3 tbsp Flour
2-3 tbsp Oil or Butter

Biscuits
• Preheat oven to 425°F
• Combine dry ingredients in a bowl and add vegetable shortening.
• Mix with dough mixer or hands until it looks like cornmeal
• Add milk and stir just until mixed.
• Either drop by spoonful or press on at surface and cut with a cutter or upside down glass for round shapes.
• Place dough on nonstick pan and bake for 12-14 minutes.
Gravy
• Brown vegetarian sausage and set aside
• Heat oil and add our. Use whisk to stir for 2-3 minutes
• Add milk and allow to thicken, stirring constantly. Add more milk as necessary to get thick, creamy sauce.
