HEAD RETENTION
Water sheets off glass without
forming droplets.
Wet glass and shake salt into it.
Anywhere there is a grease lm
the salt will not adhere.
Foam will adhere to the side
of the glass after each drink
creating rings or a “lacing”
pattern. A random pattern will
form in a dirty glass.
A dirty glass produces large
coarse bubbles and a rapidly
disappearing head. A clean
glass will form a thick, creamy
head and the beer will be clear
of bubbles.
