I chose this breakfast burrito because it was
something I began to eat a lot during
quarantine. It was the perfect way to get a
relaxing day started. It is just as rewarding as
it is simple to make. It doesn’t take too much
time and paired with a glass of orange juice it
makes a very lling and tasty breakfast.
Yields: 1 serving/burrito
Ingredients
2 Eggs
Salt and Pepper to taste
Red Chili Flakes
Sausage
Pepper Jack Cheese
Cheddar Cheese
1 Russet Potato (made into breakfast potatoes)
1/4 Avocado
Chipotle Mayo
1/2 Green Pepper
1/4 Cooked Onion

Instructions
• Begin by cutting up the potato into cubes and fry it up in a pan with salt and pepper.
• Next, cook up the sausage with the green pepper and onion. Then, scramble the egg with a small amount of
cheddar cheese, chili akes, salt, and pepper.
• Now, begin assembling the burrito by covering the bottom of a tortilla with chipotle mayo, then add the
eggs, a slice of pepper jack cheese, the sausage, peppers, onion, potatoes, and top with sliced avocado.
• Roll up the burrito, and heat it on a pan until both sides have browned.
