Slow Cooker Lemon Chicken Soup

This is a great soup to come home to in the
slow cooker. Any crusty bread goes really
well with it. I especially like to dip a piece of
buttered baguette into this soup. You can
easily add other vegetables as well as mix in
cooked rice or cooked pasta. A friend serves
this soup with Zoodles! This soup freezes well
for a quick meal on a hectic day.
Yields: 7-8 servings
Ingredients
Oil for sautéing vegetables
4 stalks Celery, chopped small
1 Onion, chopped small
4-6 cloves (at least 2 tbsp, but more if you like)
Garlic, minced

Heat enough oil in a pan on medium-high heat
Add celery and onion, cook until just translucent
Add garlic, cook another 1-2 minutes
Lower to medium-low heat
Add salt, pepper, rosemary, and thyme - stir
Add carrots - stir
Place sautéed vegetable mix into the bottom of a slow cooker
Place chicken breasts on top of vegetable mix
Pour in the broth
Add red pepper and bay leaf
Cover and cook on low for 8 hours
In the last hour of cooking, add the white beans to slow cooker. Stir gently to mix.
At the end of cooking, remove chicken and shred. Return shredded chicken to slow cooker
Juice lemons, being careful to remove any seeds
Pour juice into slow cooker and stir
Remove bay leaf and serve
4-6 Carrots, cut into small coins/circles
1/2 tsp Salt
1 tsp Black Pepper
1/2 tsp Dried Rosemary
1/4 tsp Dried Thyme
pinch (more or none depending on your taste)
Red Pepper Flakes
NOTES:
We use 2 forks to shred the cooked chicken

My mom often serves this soup with lemon slices or wedges to add more lemon avor

We have used cannellini, Navy, and Great Northern beans in this soup. You can mix and match the beans.

As for the red pepper, we have made this soup using none, a pinch, or more depending on how much spicy heat we

wanted. All have tasted good.
1 Bay Leaf
2 Chicken Breasts, boneless and skinless
2 quarts Chicken or Vegetable Broth
2-3 Lemons, juiced
