This is an easy side dish that goes well with all
kinds of main dishes. It is also a great and
tasty way to eat your vegetables – especially
the green, leafy kind!
It’s really good. I want other people to try it
and taste how good it is! Even if you don’t like
broccoli, you should try it.
Yields: Cook’s choice
Ingredients
your desired amount Broccoli Florets
Extra Virgin Olive Oil, measured by tablespoon
Salt and Black Pepper
1-2 (to taste) Lemons for juicing

Preheat oven to 400°F.
Place desired amount of broccoli orets in a large bowl.
Add 1 tbsp of extra virgin olive oil to broccoli, and stir.
Keep adding extra virgin olive oil 1 tbsp at a time until the broccoli is very lightly coated.
Place broccoli in glass baking dish or parchment paper-lined baking sheet. Broccoli should be in a single
layer.
Season very lightly with salt and pepper.
I usually sprinkle 1-2 pinches of salt and 1-2 shakes of black pepper over a half-sheet pan of broccoli.
Place broccoli in oven and cook for 10-12 minutes at 400°F.
Broccoli should be a bright green color and feel softened.
Give the broccoli a stir and lower over temperature to 350°F.
Cook for 15 minutes.
After 15 minutes, squeeze juice from ½ lemon or more to taste over broccoli and stir.
Return to oven for 5 minutes.
After 5 minutes, if the broccoli is roasted to your liking, remove and season with additional salt and pepper
&/or lemon juice if desired. Serve.
If you would like to roast broccoli further, continue cooking at 350°F, checking in 5 minute increments until
roasted to your liking.
NOTES:
I like the broccoli to be extra crispy, and it usually takes about 25-30 minutes at 350°F using a glass
•
baking dish. I also like very lemony broccoli, so we will squeeze another ½ - 1 lemon onto the broccoli
after cooking.
You may also serve the broccoli with lemon slices or lemon wedges for those who like more lemon
•
avor.
Glass baking dishes and baking sheets (especially the dark coated sheets) can alter the needed
•
cooking time. Also, each oven is different. Be sure to check the broccoli as it cooks to determine the
cooking time needed using your oven and baking dish or sheet.
