Black Garlic
Ail noir
Black garlic has a complex, deep umami flavour: soft,
sour and with notes of balsamic vinegar and anise. Dried
and granulated like other spices, use this dried black
garlic at a ration of 1:3. Use in sauces, quiches and soups.
